QUALITY, HYGIENE AND FOOD SAFETY IN OUR STORES
In our store sections, restaurants, and production areas, we manage and oversee the entire process from goods acceptance to delivery to customers according to the "CarrefourSA Quality Management System," which is based on legal regulations and global practices. This is done by our Quality Assurance Team to ensure correct service and food safety.
In our meat departments with production and packaging activities, we manage our processes under the supervision of veterinarians. For our bakery and pastry sections, our processes are overseen by food engineers.
In addition to the products we offer for sale, we also prioritize the safety of the equipment and surfaces used for product slicing and packaging in our fresh food sections. We regularly analyze and monitor the cleanliness effectiveness of this equipment and these areas.
For every product we produce and process in our stores, we conduct shelf life studies at accredited laboratories and verify shelf lives through annual analyses to ensure that we offer safe products on our shelves.
We design our stores based on hygienic design principles and perform maintenance in line with these principles. We carefully select equipment used in our stores according to its application area and check its suitability for food.
We know that the most important role in our field operations lies with our store teams, and we conduct face-to-face and onsite training with these teams to ensure that the CarrefourSA Quality Management System becomes ingrained in our company culture.
Just as with all our processes, we prioritize paperless and digital solutions in our quality processes. To this end, we provide our staff with "Quality Handbooks," created for each section, through the C-mobil application, focusing on hygiene and food safety.
HYGIENE AND FOOD SAFETY AUDITS IN OUR STORES
At CarrefourSA, we monitor hygiene and food safety, consumer health, employee health, service standards, and compliance with general food hygiene regulations through our hygiene and food safety audits. These audits are conducted unannounced by third-party independent firms with dedicated and trained teams.
Our audits ensure that essential requirements are met in areas such as goods acceptance, storage, logistics, production, and sales, including cleaning and sanitation practices, cold chain maintenance conditions, traceability, pest control practices, infrastructure, and equipment. In parallel with our audits, we analyze samples of food, equipment, staff hands and clothing, drinking water, and ambient air to detect potential hazards from physical, chemical, or biological factors in advance and take necessary precautions.
The content of our hygiene and food safety audits raises awareness among our employees, helping them become conscious consumers regarding safe food and hygiene even outside of their professional lives.
To systematically audit and report all our processes and activities related to hygiene and food safety, we use specialized software. This software allows us to effectively track store hygiene and food safety audits, sampling, actions, and reporting.
